This weekend (thursday and friday in Qatar) I am going for shooting at the pearl area
https://thepearlqatar.com/ in Doha
I applied for a permit last week and should have it on time, advantages of permit is am facilitated to go anywhere there including rooftops.
I didn't ship all my gear yet. Only camera body I have is 7Dmark2 for the time being.
The area is vast so I there will be plenty of walking.
In daytime it is very hot there (at least 40 degrees,  47 last week) so being outside isn't recommended although I have been doing it all the time, however most shooting will start around sunset.
Going today to explore the area.
As for the gear.
aside tripod and 7DMkii I have the following lenses here:
Samyang 8mmf3.5 fisheye
Canon  EFs 10-18, EFs 15-85, EFs 17-55
Tokina 16-28 f2.8
Canon EF 50f1.4 85f1.8  100 macrof2.8  70-300f4-5.6 IS
I only have a 77mm polarizer that fits 17-55
I am considering taking the fisheye ,10-18 and 17-55 plus 50f1.4 why 50f1.4 for sunstar effect where it is better than others
however I am ready to change setup upon your recommendations
Any shooting tips also would be welcome as I have very limited experience with such setups.
Looking at the images on the website, your plan seems to be alright.
But for sun stars you'll probably need a tripod.
