Regarding serviceability; it depends on the issue. Almost all canon lenses are very much serviceable. Nikons are as well, though often they are more difficult to work inside and there is also the issue of parts. Zeiss is a mixed bag. They are very, very serviceable but some of the optical adjustments you can make leave me scratching my head - for example the 35/2 you can basically spin the entire optical assembly in front of the aperture stop with native adjustments. That comes into two pieces with a screw; if you unscrew it you can use the threads to push an element around a little bit. I don't think this is an intended service feature as it is literally guess and check.
Sony is also usually serviceable, though they seem to not understand what to do to fix failed adhesive between the AF motor and the AF cam
