I have the possibility to buy a 135 mm Leica Elmarit with a Nikon ring. The original ring has been removed and a Nikon ring mounted so that the lens works in mode M and A. Does anyone have an opinion on the IQ that this lens could give on a D700?

I assume you mean that the Leica-R bayonet has been replaced with a Nikon bayonet.
IQ-wise it is supposed to be a good lens, and should be able to handle a D700 with ease. I'd suggest you give it a try - I honestly don't know whether it is better than a Nikon equivalent to be very honest.
Kind regards, Wim
