Hi,
I have been hiking in northern Vietnam. The amount of stuff you bring along depends on your physical fitness. Hiking in the mountains is no picknick and the heavier your gear, the more you'll suffer and the more you'll be distracted from the beauty of the landscape. Can't recommend anything for Nikon, but I'd bring the equivalent of a Canon EF 17-55mm F/2.8 and a 70-200 F/4 IS. 17mm is wide enough for landscapes (on full frame) and if you would wan't to do proper bird photography, you'd have to bring much longer teles anyhow. Tripod is crucial though. But here as well, bring something that is a good balance between weight and stability, like some of the newer Gitzos. Filters: A polarization filter!
